Our coffee comes from a group of small farmers in the Aifu region centered on the town of Ermera, around 40 miles southwest of the coastal capital Dili, located in the Ermera Coffee Region. Emera is translated “red water” in the indigenous Mambai dialect reflecting the richness of the native landscape and measure of iron oxide in the fertile volcanic soils.  This “red” terroir is a catalyst helping impart qualities that manifest a crowd-pleasing cup with rustic complexity… chocolatey low tones and mildly sweet lingering intensity.  The cup dose not lose momentum… what you start with at first sip endures to the last drop. As the Timorese would say… “Aproveita moris ho kontente” … Enjoy life with happiness.

Process: Washed… entire cherry fruit flesh is removed from the bean which is subsequently dried.

Elevation: 5580 feet

Aroma: Molasses unrefined sweetness with rustic complexity.

Flavor: Dark chocolate… like a high cacao bar, sorghum syrup, roasted malt… the cup does not lose momentum as it cools.

Roast: Medium… tannic acidity low tones that mellow as it cools.

Timor-Leste, translated East Timor, is roughly half the size of Massachusetts, 20 percent the population and .7 percent the GDP. It comprises the eastern half of the island of Timor with the western half administered by Indonesia. Located 1732 miles due east of Jakarta Indonesia, 609 miles due north of Derby Australia, 1449 miles due west of Port Moresby Papua New Guinea and 3087 miles due south of Manila Philippines, Timor finds itself remotely triangulated in the Timor Sea. After being a Portuguese colony for 500 years, in 1975 internal conflict preceded a unilateral declaration of independence followed by an Indonesian invasion and annexation. Resistance continued throughout Indonesian rule and in 1999 a United Nations sponsored act of self-determination led to Indonesia relinquishing control of the territory resulting in the creation of the Democratic Republic of Timor-Leste on 20 May 2002, the first new sovereign state of the 21st century.
