"Waxaklajuun Ub'aah K'awiil" or “Eighteen Rabbit” was the Mayan King of Copan ruling 695-738 CE and is the name sake for the 11 member Zelaya Ontreras family cooperative cultivating our coffee on a micro-lot in the vicinity of Marcala, a town of 15,000 situated in the Sierra Madre Mountain’s Montecillos coffee region 96 miles due west from the capital Tegucigalpa, 146 miles southeast of Guatemala and 16 miles due north of El Salvador. A balanced coffee of subdued dark cocoa veracity complimented by an invigorating lemon upbeat finishing clean. We were surprised with the lack of fruit notes but a good straight forward brew that will connect with most palettes.

Process: Natural… cherry left intact to ferment before wash.

Elevation: 4600 feet

Aroma: On the grind… dark sugar, sweet chocolate.

Flavor: Subdued cocoa sweetness, zesty lemon.

Roast: Medium…  medium balanced body… moderate acidity.

Process: Honey… cherry de-pulped but not thoroughly washed… the outer skin is removed while leaving the sticky mucilage intact… the mucilage sugars ferment during processing contributing to flavor.
