Our honey processed coffee comes from a mico-10 bag lot sourced by 3rd generation farmer Yolan Tirta in working with a group out of the small South Sulawesi town of Angin Angin who cultivate in the Enrekang Coffee Region, one of the three major areas, with lands in proximity to Sulawesi’s highest peak, Mt. Latimojong, at 11,411 feet. This area has a historic pedigree and once was the pinnacle of Sulawesi coffee… this group intends to make this so once again… love that determination. Amy and I enjoy west coast jazz… drinking this while listening resonated like a double bass … Scott LaFaro with pianist Bill Evans in the epic 1961 Village Vanguard recordings… Paul Chambers with pianist Red Garland and drummer Art Taylor on the 1957 vinyl “Red Garland’s Piano. Process: Honey… cherry de-pulped but not thoroughly washed…  

Elevation: 4921- 5900 feet

Aroma: At the grind… chocolate biscuit, dark brooding tones. At the brew… Oreo cookie, molasses… spicy like cinnamon and burnt sugar as it cools.

Flavor: Bittersweet chocolate cookie, sweet anise/licorice like, molasses… finishes clean but with remnants of a well structured experience.

Roast: Medium… medium heavy dense body… mild acidity but great structure and saturation.

Approximately the size and population of Florida, Sulawesi is the 11th largest world island and located in the Indonesian archipelago. Located strategically on the demarcation between the South China Sea and the Indian Ocean with Australia due south and the Philippines due north the areas geopolitical significance can’t be overstated. Indonesia itself is possibly the most understated and enigmatic of all nations. The 14th largest country, the world’s largest archipelagic state comprised of 17,000 islands, the 4th most populous country and the world’s 3rd largest democracy.  Sulawesi’s capital of Mando is around 1900 miles northwest from the national capital of Jakarta on the island of Java. Although dwarfed by Java’s economy of scale, Sulawesi is singularly enigmatic and fascinating by its own stature. Archaic human activity is linked to stone tools dated 1.5 million years old.  Paleolithic cave art, dated 45,500 years ago, has been found in the Leang-Leang Caves, translated “many caves”, near the town of Maros in South Sulawesi. 600 miles north at Pokekea Megalithic Site, 400 granite megaliths dating from 3000 BC to 1300 AD, some 15-foot tall, are impressive… an interesting note, the 600-mile car ride would take 22 hours with no interior roads but lovely views of the coastline. In more recent history, the Portuguese arrived in 1523, of course looking for gold, quickly followed by the Dutch and English with the Dutch East India Company eventually taking control. The Indonesian National Revolution wrestled control away from the Dutch and by 1950 the island was absorbed into the Republic of Indonesia. Sulawesi is one of the five coffee-producing islands in the archipelago accompanied by Sumatra, Java, Bali and Flores. Again, Java stirs the drink, but Sulawesi produces a powerful potion.

Process: Honey… cherry de-pulped but not thoroughly washed…the outer skin is removed while leaving the sticky mucilage intact…the mucilage sugars ferment during processing contributing to flavor.
