Our coffee comes from a cooperative of farmers in the Gunung Tujuh area of Jambi Province, around 570 miles south of the Sumatran capital Medan, and in the zone around the 12,484-foot Mount Kerinci volcano, which is the tallest both in Indonesia and of any island associated with the Asian Continent. “Pendekar”, translated “warrior”, is a term of endearment among cooperative members when praising exemplary work. Indonesian coffees are characterized as earthy and rustic with low acidity, however, our warrior coffee is quite different. Due to the higher slopes of the Gunung Tujuh region and wet processing, as opposed to traditional wet-hulled processing, there are almost no earth tones and significantly noticeable acidity. Process: Wet/Washed… cherry completely removed before drying.

Elevation: 4600 - 4900 feet

Aroma: At the grind… toffee, rich chocolate and toasted grain. At the brew… bittersweet and caramelized.

Flavor: Cocoa, vanilla bean, chocolate malt and baked sugar.

Roast: Medium…  medium body… nice acidity.
